Ingredients
- 120 g maize flour (or cassava flour)
- 80 g smooth peanut paste
- 1 l water
- 60 to 80 g sugar
- 1 pinch of salt
- 1 tsp vanilla or lemon zest, optional
Method
- 01 Loosen the flour in 250 ml cold water until smooth.
- 02 Bring the rest of the water to a boil with the salt.
- 03 Pour in the flour mixture in a thin stream, stirring. Cook 12 to 15 minutes over medium heat, stirring constantly.
- 04 Stir in the peanut paste and sugar. Cook 5 to 8 minutes more until creamy.
- 05 Flavour if desired. Serve warm, plain or with a splash of milk.
Porridge is also made with maize or cassava alone, without peanut. Thickness and sugar vary by household; peanut paste adds richness and a snack-time aroma.
