Ingredients

  • 1–2 cooked chikwangue (kwanga)
  • 1 tbsp oil, optional
  • A pinch of salt
  • Chili sauce, to serve

Method

  1. 01 Unwrap the chikwangue and cut into slices about 1 cm thick.
  2. 02 Heat a pan or coals. Brush lightly with oil if needed.
  3. 03 Grill the slices 3–4 minutes per side until marked and lightly crisp.
  4. 04 Salt sparingly. Serve hot with pondu, fish, stewed meat or chili sauce.

Grilled chikwangue starts from chikwangue already steamed—you do not re-ferment, you reseize the slices. The smoky crust changes the table gesture completely.
