Ingredients
- 500 g fresh green beans, trimmed
- 2 tbsp red palm oil
- 1 onion, sliced
- 2 tomatoes, crushed
- 1 garlic clove
- Salt, chili
- 50 ml water
Method
- 01 Wash the beans; cut into lengths if very long. Blanch 4 minutes in salted boiling water; drain.
- 02 Heat the palm oil. Sweat the onion, add garlic and tomatoes for 5 minutes.
- 03 Add the beans and water. Cover 8–10 minutes—they should stay slightly crisp.
- 04 Season with salt and chili. Serve with rice, fish or meat.
Green beans are fresh and green—not madesu (dried red/brown beans simmered for a long time). Palm oil gives the colour and Congolese table perfume.
