Ingredients

  • 12 ripe passion fruits
  • 600 ml cold water
  • 60 to 80 g sugar
  • Juice of ½ lemon, optional

Method

  1. 01 Halve the fruits and scoop out the pulp (seeds included).
  2. 02 Blend briefly with the water, or mash the pulp into the water with a fork.
  3. 03 Strain for a smoother juice, or leave the seeds if you prefer.
  4. 04 Sweeten, add lemon if desired. Taste and adjust.
  5. 05 Serve very cold, with ice.

In season, passion fruit is easy to find at the market. Out of season, frozen pulp remains an honest base for a homemade juice.
