Ingredients

  • 400 g long-grain rice
  • 750 ml water
  • 1 tsp salt
  • 150 ml mayonnaise
  • 1 garlic clove, crushed, optional
  • 1 tsp mustard, optional
  • Chili and pepper
  • 1 tbsp lemon juice, optional

Method

  1. 01 Rinse the rice. Cook in salted water until absorbed (about 18 minutes). Fluff and let it cool slightly.
  2. 02 Mix mayonnaise, garlic, mustard, lemon, chili and pepper.
  3. 03 Fold the sauce into the warm rice, or plate the rice and spoon the mayo on top.
  4. 04 Taste and adjust salt. Serve with chicken, fish, skewers or on its own.

Loso mayonnaise is not fried rice—it is plain rice plus a cold mayo dressing, cousin to pain mayonnaise and chicken mayo. In Kinshasa it shows up as street portions and table sides alike.
