Ingredients

  • 4 ripe plantains
  • 600 g fish (tilapia, capitaine or smoked fish)
  • Frying oil
  • 1 onion, sliced
  • 2 tomatoes, crushed
  • 2 garlic cloves
  • Juice of 1 lemon
  • Salt, chili

Method

  1. 01 Season the fish with salt, pepper and lemon. Brown in a pan or grill. Set aside.
  2. 02 Peel the plantains, slice and fry until golden. Drain and salt.
  3. 03 Optional short sauce: sweat onion and garlic, add tomatoes and a splash of water, 8 minutes. Spoon over the fish.
  4. 04 Plate makemba and mbisi together. Serve at once.

Makemba na mbisi is not a new technique—it is the plate pairing of fried plantains and fish (grilled, fried or smoked). In Kinshasa and across the provinces it is one of the most requested compositions.
