Ingredients

  • 1 kg sweet potatoes (mbala)
  • Water
  • 1 tsp salt
  • 1 tbsp oil or a knob of butter, optional

Method

  1. 01 Wash the sweet potatoes. Cook whole in their skins or peeled and cut into large pieces.
  2. 02 Cover with cold salted water, bring to a boil and cook 25–35 minutes until tender.
  3. 03 Drain. Serve plain, with a little oil, or beside fish and sauces.
  4. 04 Variant: roast in the oven or on coals about 40 minutes for a caramelised skin.

Mbala means the sweet potato tuber. Matembele are the leaves of the same plant—another gesture, another page. Feculent cousins: boiled yam, steamed plantains.
