Ingredients

  • 2 half baguettes or street rolls
  • 4 tbsp mayonnaise
  • 2 eggs
  • 2 sausages or 100 g grilled meat, optional
  • 1 small onion, sliced, optional
  • Chili powder or pili-pili sauce
  • Salt

Method

  1. 01 Cook the eggs fried or as a thin omelette. Salt lightly.
  2. 02 If using sausages, brown them in a pan; otherwise warm the grilled meat.
  3. 03 Open the bread without splitting it fully. Spread mayonnaise generously.
  4. 04 Fill with egg, sausage or meat, and onion if using.
  5. 05 Dust with chili. Serve at once, still warm.

Pain mayonnaise is Kinshasa street fuel: not a sit-down plate, but a quick sandwich between errands. Mayo binds everything; chili does the rest.
