Ingredients
- 1 chicken, cut into pieces
- 3 tbsp oil
- 2 onions, sliced
- 3 garlic cloves, crushed
- 1 tsp mustard
- 200 ml mayonnaise
- 1 tbsp lemon juice
- Pili-pili, salt and pepper
- 1 stock cube, optional
Method
- 01 Season the chicken and brown it in hot oil, then set aside.
- 02 In the same pot, soften the onions. Add the garlic, crumbled stock cube and a splash of water.
- 03 Return the chicken, cover and simmer 25 to 30 minutes until tender.
- 04 Off the heat, mix mayonnaise, mustard, lemon and pili-pili. Coat the still-warm chicken.
- 05 Stir gently so the sauce does not split. Serve with fries, rice or salad.
Poulet mayo is neither moambe nor a tomato sauce: the cold mayonnaise liaison is added at the end. Mustard and chili levels vary widely from one household to another.
