Ingredients
- 400 g grated sweet cassava (or 280 g cassava flour)
- 3 eggs
- 150 g sugar
- 100 ml oil or melted butter
- 150 ml milk (or coconut milk)
- 1 packet baking powder (11 g)
- 1 pinch of salt
- 1 tsp vanilla
Method
- 01 Preheat the oven to 180 °C. Grease a tin.
- 02 If using fresh cassava, grate finely and press lightly to remove excess water.
- 03 Beat eggs and sugar until pale. Add oil, milk and vanilla.
- 04 Fold in the cassava (or flour), baking powder and salt. Mix without overworking.
- 05 Pour into the tin. Bake 40 to 50 minutes until a knife comes out clean.
- 06 Cool slightly before unmoulding. Serve in slices.
Use only sweet cassava meant for eating. The flour version is more even; fresh grated cassava stays moister.
