Ingredients

  • 200 g kossa-kossa (dried shrimp)
  • 2 onions, sliced
  • 3 tomatoes, crushed
  • 2 garlic cloves
  • 2 tbsp palm oil
  • 1 small chili
  • Salt and water

Method

  1. 01 Rinse then soak the shrimp for 30 minutes. Drain.
  2. 02 Sweat onions and garlic in the oil. Add tomatoes and chili.
  3. 03 Add the shrimp and a little water. Simmer 25 minutes.
  4. 04 Taste before salting: dried shrimp are already salty and iodised.

Kossa-kossa brings a concentrated sea taste. Quality at the market is read in colour and smell more than in size.
