Ingredients

  • 800 g beef or goat, in pieces
  • 2 onions, sliced into rings
  • 2 tomatoes, sliced
  • 1 bell pepper, cut into strips
  • 3 tbsp palm oil
  • 2 garlic cloves, crushed
  • 1 tsp grated ginger
  • Salt, chili, stock cube
  • 4 large banana leaves

Method

  1. 01 Mix oil, garlic, ginger, salt, chili and cube. Coat the meat and marinate for 1 hour.
  2. 02 Soften the banana leaves over the flame.
  3. 03 Fill each leaf with onion, tomato, pepper and meat. Drizzle with a little palm oil.
  4. 04 Close into a tight parcel.
  5. 05 Steam or bake at 180 °C for 50 to 60 minutes.
  6. 06 Serve opened at the table with plantain or fufu.

Meat liboke uses the same gesture as fish liboke, with a longer cooking time to tenderise the flesh.
